What is Erythritol?Â
Erythritol is a sugar alcohol that occurs naturally in some plants.  Though it looks and tastes like sugar, it has nearly zero calories (0.24 calories per 1g), nearly zero carbohydrates, no unpleasant aftertaste, and a low glycemic index score due to its slow absorption in the digestive tract, making it a perfect natural substitute for sugar.  It does have 4 grams of carbohydrate per teaspoon, but zero net carbs, so it doesn’t count towards your daily carb allowance on keto.Â
Just like sugar, it can used as a sweetener in any food or drink.  Erythritol is about 70 to 80% as sweet as sugar which means in recipes that call for sugar, simply substitute 1g of sugar for 1.3g of Erythritol.Â
