What is Xanthan Gum?

Xanthan Gum is an additive used as a thickener, stabiliser and emulsifier.  Xanthan Gum is made when strains of the Xanthomonas campestris bacteria are fed a solution of glucose that’s been derived from corn.  This harmless bacteria ferments the sugary solution, and as a result develops a sticky protective coat that has a consistency that makes it suitable for binding and thickening.  It’s these properties that make Xanthan Gum useful in food production – most notably in gluten-free baking, where it helps starches combine and improves the texture, rise and shelf-life of gluten-free bakes.

When Xanthan Gum powder is added to a liquid, it quickly disperses and creates a viscous and stable solution.  This makes it a great thickening, suspending and stabilizing agent for many products.

It was discovered by scientists in 1963.  Since then, it has been well researched and determined safe.  It is particularly useful for those with coeliac disease or non-coeliac gluten sensitivity who must follow a gluten-free diet.

Xanthan Gum is not just found in the kitchen, however – you’ll also find it in your bathroom cabinet.  Items like toothpaste, face creams, shampoos and body lotions may all contain Xanthan Gum.  It helps emulsify and thicken these products, making them more visually appealing and easier to squeeze out or pour.

 

Use & Benefits:

Xanthan Gum is well known for its ability to thicken and stabilize food products, but it may also provide some health benefits.

Studies indicate that Xanthan Gum helps normalize the moisture content of the stool, absorbing excess liquid in those with diarrhea, and softening the stool in those with constipation.  It also might help decrease the amount of cholesterol and sugar that is absorbed in the gut.

Some use Xanthan Gum for constipation, diarrhea, irritable bowel syndrome (IBS), high cholesterol, and high blood pressure.  It is also used for obesity, diabetes, and many other conditions, but there is no good scientific evidence to support these other uses.

Ideas for thickening food:

Use Xanthan Gum for ice cream, yogurt, salad dressing, gluten-free baked goods, gravies, sauces, kefir, breakfast cereals, vegetable juices, pudding, soup & cheese.  You could also use Xanthan Gum to thicken you protein powder and turn it into a mousse or a creamy dessert.

Xanthan Gum is an indispensable ingredient in baked goods due to its unique ability to improve texture and crumb structure and contribute to both dough yield and the extension of shelf life.

It serves as an excellent binding agent for ingredients used in gluten-free recipes and effectively thickens batter.

How much to use?

You will need to use small amounts to get the desired result.  We would suggest starting with the lowest amount and build up from there.  Amounts can range from 0.05% in baked goods to 2% in processed vegetable juices.  For example:

For a baked good recipe made up of 1kg in dry ingredients (or liquid), add 0.50% of Xanthan Gum (5 grams) to your ingredients and mix well.  For a thicker consistency, add more Xanthan Gum until you get your desired result.

Can be used together with Guar Gum.

Warning:  Don not exceed more than 5% of Xanthan Gum for food products.

Suggested Use:

Adult – Mix 0.05% in baked goods to 2% in processed vegetable juices.  Add to your favourite baked goods;  thicken gravy, protein powder, smoothies, homemade ice cream or yogurt.  Add to powder or liquids.

Children 4 – 15 years – Only as professionally prescribed.  Not to be used by children under 4 years of age.

Animal – Only as professionally prescribed.

Product may vary in colour, taste and consistency which can occur from batch to batch.  This does not affect potency or quality.

Clumping may occur and is a natural occurrence.  Simply break up with a spoon to create free flowing powder.
