What is IMO Syrup?
IMO Syrup is a high-maltose syrup made up of a mixture of short-chain carbohydrates. IMO is short for Isomalto-Oligosaccharide and it is a natural product made from soluble Tapioca Starch. (Tapioca is starch obtained from the root of cassava, a plant that mostly grows underground, like a potato).
Isomalto-Oligosaccharides are a normal part of the human diet and occur naturally in fermented foods such as rice miso, soy sauce, and sake. Â IMO Syrup can be a sweet-tasting (high-density) syrup, or spray-dried into powder form.
IMO Syrup is used mostly as a source of dietary fibre. Â However, IMO Syrup is also used as a low-calorie sweetener in a variety of foods like bakery and cereal products. Â Since IMO Syrup is about 50% as sweet as sugar, it cannot replace sugar in a one-to-one ratio.
